<h2>Making Sorrel Juice using the Sorrel sepals</h2>
<p>Sorrel Drink has been associated with the celebration of the Christmas season in Dominica for hundreds of years , it has earn its self the name “The Christmas Drink” partly due to its red Santa Claus- ish color and largely due to the time it produces the flowers sepals use for making sorrel juice as we call it locally.</p>
<p>Throughout the Caribbean Sorrel dink is prepared in many different ways but today I will be sharing with you how Sorrel drink is made on the Nature Island Dominica.</p>

<p>The following ingredients will make 2 litters of sorrel drink.</p>
<ul>
<li>1lb Sorrel Sepals</li>
<li>1&#8243; of Ginger</li>
<li>5 tbsp Sugar</li>
<li>2 liters of water</li>
</ul>
<h5>Optional Spices</h5>
<ul>
<li>1 tsp cloves</li>
<li>1 tsp cinnamon</li>
<li>1 tbsp lemon / orange peel</li>
</ul>
<h4>Directions :</h4>
<p>Add grated ginger  to sorrel sepals then pour 2 litters of water into the pot and bring to rapid boil ( traditionally boiled on coals  to add flavor).</p>
<p>While boiling, add your optionals ingredients to the mixture to personalize your sorrel drink if desired.</p>
<p>Allow  your sorrel to boil for at lease 15mins, then remove from heat and cover to lock in the flavor.</p>
<p>Allow the sorrel mixture to cool off then use a fine strainer to separate the sorrel juice from the sorrel sepals.</p>
<p>At  this point  stir the sugar into the strained sorrel juice and  add your optional  dash of Run or wine to to preserve the drink and add to flavor.</p>
<p>Bottle your drink and store it in your refrigerator.  Served cold with ice!</p>

<h2>The Indian River</h2>
<p>The Indian River is like a mini Amazon teeming with life – situated in the center of the town of <strong>Portsmouth</strong> to the North of Dominica.</p>
<p>The  river was name <strong> Indian River</strong> after  the settlements of the Kalinagos formally known as  Carib Indians  that existed on the upper banks  of that river.</p>
<p>The Indian river gushes down the Morne aux Diables  Mountain range and  meanders to the  gently lowlands of Portsmouth  where it flows gracefully into the Caribbean sea. Due to its&#8217; unique formation,  being below the sea level the water at the lower areas of the rivers  is  brackish, contributing to its unique vegetative growth and life forms.</p>
<p>The Indian River showcases Flora and Fauna that are very unique to that area of Dominica , some  of this variants including  Herons , King fisher, iguanas , varieties of birds.</p>
<p>The trip up the river take about 1 – 1 ½ hours.</p>
<p>At the top of the river sits a bar that serves a really bizarre menus and dish up some of the hottest local rum. There are lots to see and much  history to learn so its vital that you take along your camera.  Some of scenes in <strong>Pirate of the Caribbean</strong> was shot there.</p>

<h2>RUSM Art&amp;Craft Fair</h2>
<p>The RUSM Art and craft fair is an annual even hosted by Ross University geared towards raising  awareness of  local culture while simultaneously raising funds for local charities on island.</p>

<p>This year has been quite an interesting one as artist and craftsmen came from all over Dominica with their paintings, wood carvings, woven baskets, walking sticks, calabash, island photography, dolls, jewelry, and souvenirs to take part in this grand event.</p>

<p>At the fair, quit a few of the attendees got paintings and crafts and participated in a many of the fund-raising events but one of the artist that caught my attention was a gentle man by the name of Ray Francis who’s artistic concept was literally outside of the box, his paintings featured elements from his scenes protruding out of the canvas, one could actually feel and hold the hands and feet of the paintings.</p>

<p>While making my rounds I stumbled upon Orlando who has been a very frequent contributor to the event. He showed me some of his work and explained that the carvings were all skillfully carved from a single block of wood (no room for error) wow! . an there was Kathy Sorhaindo who has no facebook or twitter account (even my 4moths old baby has his own account LOL ), fortunately she had a hotmail address who created jewelry from copper and rare pieces of glass bottles washed up from the sea.</p>

<p>Just before I left the art fair I bounced up with Kelvin James who has been a close buddy, he is full of raw talent; he has mastered the art of painting water and is not afraid of trying new concepts.</p>

<p>Native to South of Mexico and neighbor countries nowadays is cultivated in most of the tropical countries and in the USA, where it was introduced first in Florida, Hawaii, Puerto Rico and in Virgin Islands also very common in Dominica and the rest of the Caribbean.</p>
<p>Aside from being delicious to Papaya also contain, abundant health benefits and medicinal value. Papaya contains natural fiber, carotene, vitamin C and essential minerals. Papaya can be eaten as a fruit, a smoothie or even a milkshake, and also contain enzymes like arginine and carpain. Arginine is an amino acid, it is essential for male fertility while carpain is said to be good for our heart.</p>
<h3>What is Papaya</h3>
<p>Papaya is the fruit of the papaya tree, from the gender of Carica, more exactly Carica Papaya. In Angola and Mozambique they use the term mamão/ mamoeiro to identify the rounded fruit, and papaya/ papaiera for the elongated one.</p>
<p>Papayas are oval berries with soft yellow- green skin. Its pulp is deep orange color, sweet and soft. It has its central cavity full of black rough seeds.</p>
<p>Papayas are eaten fresh in salads or juices. It has a high content of papaine, a protheolic enzyme, used in gastrointestinal treatments medicines and the absorption bruises.</p>
<h3>Papaya for the Beauty</h3>
<p>There are products came from Papaya which is used in many skin lightening creams. Lotions or creams that contain papaya are used to lighter or fairer skin. Papaya is used also in treatment for acne. Papaya is well known to makes the skin glow. The enzyme called papain can be found in Papaya which helps to dissolve dead skin, thus making a fresh and clean glow face.</p>

<p>As a member of the Caribbean Tourism Organization (CTO), Dominica joins the rest of the Caribbean in celebrating the first Caribbean Tourism Month during November.</p>
<p>This year the month is celebrated under the theme ‘One Sea, One Voice, One Caribbean’.</p>
<p>The objectives of Caribbean Tourism Month is to raise awareness among Caribbean people of the importance of tourism in the Caribbean, to enhance the profile of the Caribbean tourism sector in the marketplace, to reflect on the invaluable impact of tourism on the economic, social and cultural well being in the Caribbean, to attract positive media coverage of the Caribbean and the local tourism product and to celebrate the diversity of what the Caribbean offers.</p>
<p>In observance of the month, the Discover Dominica Authority, in collaboration with local organizations and youth groups will initiate activities centered on litter management, familiarization visits to tourism sites and tourism awareness programmes.</p>

<h2>Dominica Celebrates Flag Day</h2>
<p>October 19<sup>th </sup> 2011 has been observed as Flag Day or Jounen Dwapo as called  locally  in our mother tongue on the commonwealth of Dominica. Flag Day is part of  Dominica Independence celebration</p>
<p>According to Local historian <strong>Lennox Honychurch</strong>, Dominica’s flag was originally designed by artist and playwright <strong>Alwin Bully</strong> in early 1978 in preparation for the gaining of independence from Britain later that year however cabinet made certain small alterations to the original design throughout the years being as late as 1988.</p>
<p><a title="Dominica National Flag" href="http://searchdominica.com/dominica/national-symbols/national-flag">The flag of the Commonwealth of Dominica</a> consists of a circular emblem of red bearing a <a title="Dominica National Bird " href="http://searchdominica.com/dominica/national-symbols/national-bird">Sisserou parrot</a> (<em>Amazona imperialis</em>) standing on a twig encircled by ten lime green stars. This is superimposed on three vertical and three horizontal stripes of yellow, black and white forming a triple coloured cross against a general background of forest green</p>
<p>On Flag day Dominicans at home and in the diaspora are urged to fly the flag of the commonwealth of Dominica as a sign of patriotism.</p>

<p>Dominica’s Ruth Augustine leaves for Trinidad on Monday September to compete in Cycle 1 of the Caribbean’s Next Top Model (CaribeNTM.)<br />
<h4>Close-Up</h4><br />
Ruth was selected from among hundreds of women from 35 territories across the region.</p>
<p>The Kingshill beauty will spend 40 days in a house in Port of Spain with the 14 other models, where they will have their every move filmed. They will compete for a grand cash prize and the opportunity to win a modeling contract with a top international modeling agency.</p>
<p>Miss Universe 1998 Wendy Fitzwilliam is producing the Caribbean’s Next Top Model for airing on CBS affiliate WSEE TV. The Top Model format was created by American supermodel Tyra Banks.</p>
<p>Ruth, a 2010 contestant in the Miss Dominica pageant, says she is thrilled to have made the final 15 and looks forward to launching the modeling career that she has always dreamed of.</p>
<p>“I get excited when modeling. As a model, I’m fierce.  I see this as an opportunity to pursue my dream of becoming an internationally recognized model and representing and making my country proud,” Ruth said.</p>
<p>“Whatever the outcome of the competition in Trinidad, I plan to bring my experience and newfound knowledge to help improve the modeling and fashion industries in Dominica,” Ruth added.</p>
<p>She advises that it is important to keep one’s dreams alive, understanding that achieving goals requires faith, belief in self, hard work and determination.</p>
<p>Cycle 1 of Caribbean’s Next Top Model will air 11 episodes from December 5<sup>th</sup>, 2011 at 8 p.m. on WSEE TV.</p>
